I am looking to update the firmware on my Pioneer AVH-Z2000BT but the option is greyed out on the head unit. Any ideas how I do this?

On my SPA-120s to do a FW Upgrade the USB stick has to be in slot 1 or it won't show up. Also make sure your firmware file is in the root of the USB, that it is FAT32 etc. all the usual.

I just checked my friend in works same unit, he was on version 7.2 and we were able to update it using the method in the above pdf just now.
Everything went 100% although it took around 15 mins start to finish.

Was the option for the firmware update greyed out before he plugged the usb in and once he plugged it in did it allow him to select it to install?

This is how it works on my SPA120. Must be plugged into the top USB port too.

Yes the update was greyed out. He switched off his set, plugged in the usb then followed the guide.
When he switched it back on, the update option was available and we just proceeded.

I would say try a different usb stick as from experience some brands are ***** and cannot be read by devices.

Right so I have tried three different USB sticks all formatted and a new version of the software each time has been loaded onto them. I have only gotten one message from one of the usb sticks to say it was incompatible and the others nothing. The option is still greyed out so it can do one and stay on the version it is on.

Step by step here

2GB + card?
Formatted to FAT32?

I have the same problem but have found this
"Bah. Sussed it after fully reading the manual. Not knowing what purpose it served, I hadn't bothered connecting the green wire to the handbrake switch since it seemed like a lot of work. Turns out you can't update the firmware without that wire connected. Best get on with wiring that up then I suppose!"
